Recipe idea: Vegan roasted vegetable omelettes
To prepare this recipe, start by roasting your favourite vegetables: you can use a mix of peppers, onion, courgette, aubergine and carrot. Cut them into strips or small cubes, mix with a little EVOO, salt and spices to taste, and roast them in the oven until golden and tender.
Meanwhile, prepare the vegan omelette base by mixing whole green pea flour with water and a pinch of salt. The recommended ratio is 1 part flour to 2 parts water, until you get a smooth, slightly thick batter like pancake mix.
