The first thing I would like to do is to differentiate between hydrolyzed and pregelatinized. The hydrolyzed one is not for porridges, it does not thicken, and the pregelatinized one does thicken, it is very good for making porridges. Let's say that the hydrolyzed one is for drinking and the pregelatinized one is for eating with a spoon. I say this because I have heard many people say that HSN rice flour sucks because it does not thicken, and the reason for this is simply because they have bought the wrong kind. That said. This pregelatinized rice flour, quality price is the best you can find, it dissolves well and mixed with protein you get a good porridge.

I have celiac disease, and I use this flour both alone and with other flours to make my own gluten-free bread. It is wonderful on its own, but when mixed with other flours (corn and lentils) it makes a bread of unbeatable quality. Especially if it is made with the POOLISH leavening technique (in case anyone who also makes their own gluten-free bread is interested to know). Only this way the bread is 100% leavened and super fluffy.
