Citric Acid by RawSeries is a vegan food additive in powder, based on pure acid (E 330).
Citric acid is mainly used as an acidulant in food, to enhance the flavour of recipes and other products including food supplements, providing an acidic taste.
This product is suitable for vegan diets.
Citric acid has an huge number of possible uses in the food industry, and you can also use it to improve the quality of your food.
Discover the uses of citric acid!
Citric acid is a compound naturally present in many fruits, especially citrus, of which: lemons and limes are the richest in this acid.
The characteristic taste of citrus fruits derives, in part, from their high density of citric acid, which provides a powerful natural acid flavour to their juice and its pulp.
Citric acid powder is an acid additive that allows us to enhance the acid aftertaste of juices and smoothies, desserts and other homemade preparations.
Citric acid can be used to prevent discoloration and extend the shelf life of peeled and/or chopped fruits and vegetables.
After removing the peel from many fruits such as apples, alkaline residues destroy the natural antioxidant activity of ascorbic acid present on the surface of the fruit, making it more susceptible to oxidation.
A clear example of this is the browning of avocado once opened and kept for a few hours in contact with the air.
Wash fruits and vegetables in a water solution with 1-2% citric acid after removing their skin, allows us to lower the pH to a point that stabilises The ascorbic acid naturally present in these foods, and recovers the ability to inactivate the oxidative enzymes that produce the oxidation of the fruit, up to a certain point.
For the homemade preparation of jellies and jams.
Jams gel thanks to the presence of significant amounts of sugar from the fruits used to make them, and a sufficiently acidic environment.
Many fruits such as mangoes, blueberries, cherries, or peaches do not naturally contain a sufficiently acidic pH so that the pectins present in their matrix can act as gelling agents during the process and after the cooking and concentrating process.
The addition of citric acid makes it possible to achieve a pH of 3.5, which will making homemade jams a successful process, even with fruits that are more difficult to use, with better texture and enhancing the flavour of the preparation.
In gelatin-based desserts, pH control is also important to achieve firm structures linked to the establishment of strong collagen networks typical of the gelatine protein.
Citric acid can help this process, lowering the pH during preparation, and enhancing its flavour.
Preserved food is a type of preparation that increases the shelf life of food.
In order to carry out this process, knowledge about the procedures for preserving and treating canned food is required, in order to obtain microbiologically safe final products.
At HSN we discourage home-made preserves without professional knowledge of the process of making them.
The main methods of canning are by pressure and/or control in boiling water, following a series of steps established by entities such as the United States Department of Agriculture (USDA).
The high pressure and temperature preservation method is the most suitable for food preservation, and the only one allowed for those with a high or low pH degree of acidity.
The heat treatment of preserves is easier in acidic foods or foods with a lower pH, since the temperature necessary to reach the preservation conditions is lower.
This is why for the preservation of foods such as tomatoes, for example, it is recommended to lower the pH by adding citric acid to the preparation, in order to reduce the pH and facilitate food preservation (USDA, 2017).

Effective flavoring
Huli | 07/11/2023
Good flavoring, with little quantity you get that touch of lemon to combine with other supplements. You have to be careful with the amount as it can be very bitter.
