    Citric acid is mainly used as an acidulant in food, to enhance the flavour of recipes and other products including food supplements, providing an acidic taste.

    Adds flavour

    Citric acid is a compound naturally present in many fruits, especially citrus, of which: lemons and limes are the richest in this acid.

    The characteristic taste of citrus fruits derives, in part, from their high density of citric acid, which provides a powerful natural acid flavour to their juice and its pulp.

    Citric acid powder is an acid additive that allows us to enhance the acid aftertaste of juices and smoothies, desserts and other homemade preparations.

    Preservative

    Citric acid can be used to prevent discoloration and extend the shelf life of peeled and/or chopped fruits and vegetables.

    After removing the peel from many fruits such as apples, alkaline residues destroy the natural antioxidant activity of ascorbic acid present on the surface of the fruit, making it more susceptible to oxidation.

    A clear example of this is the browning of avocado once opened and kept for a few hours in contact with the air.

    Wash fruits and vegetables in a water solution with 1-2% citric acid after removing their skin, allows us to lower the pH to a point that stabilises The ascorbic acid naturally present in these foods, and recovers the ability to inactivate the oxidative enzymes that produce the oxidation of the fruit, up to a certain point.

    In the production of canned food

    Preserved food is a type of preparation that increases the shelf life of food.

    In order to carry out this process, knowledge about the procedures for preserving and treating canned food is required, in order to obtain microbiologically safe final products.

    The main methods of canning are by pressure and/or control in boiling water, following a series of steps established by entities such as the United States Department of Agriculture (USDA).

    The heat treatment of preserves is easier in acidic foods or foods with a lower pH, since the temperature necessary to reach the preservation conditions is lower.

    This is why for the preservation of foods such as tomatoes, for example, it is recommended to lower the pH by adding citric acid to the preparation, in order to reduce the pH and facilitate food preservation (USDA, 2017).
