Citric acid is a compound naturally present in many fruits, especially citrus, of which: lemons and limes are the richest in this acid.
The characteristic taste of citrus fruits derives, in part, from their high density of citric acid, which provides a powerful natural acid flavour to their juice and its pulp.
Citric acid powder is an acid additive that allows us to enhance the acid aftertaste of juices and smoothies, desserts and other homemade preparations.
Citric acid can be used to prevent discoloration and extend the shelf life of peeled and/or chopped fruits and vegetables.
After removing the peel from many fruits such as apples, alkaline residues destroy the natural antioxidant activity of ascorbic acid present on the surface of the fruit, making it more susceptible to oxidation.
A clear example of this is the browning of avocado once opened and kept for a few hours in contact with the air.
