Evopectin potato is a pure source of complex carbohydrates (modified starch - potato amylopectin), in its nutritional table you can find the carbohydrate value of the product, which is around 80%.
If you compare the nutritional information with Evopectin 2.0 corn you will notice a significant difference in the amount of carbohydrates contained in both products (97% vs. 80% approximately), why if both are amylopectin?
In fact, the amount of carbohydrates in both products is identical, but Evopectin 2.0 maize is measured on a dry basis, i.e. the moisture content of the amylopectin has been removed, whereas in Evopectin potato the carbohydrates have been determined on the product with moisture.
Moisture is part of the powder and removing it standardises the measurement, avoiding variability, but reflects a higher carbohydrate content.
The carbohydrate content of potato Evopectin measured in dry matter is identical to that of Evopectin 2.0 (maize starch).
Light texture
Thanks to the process we use to modify the potato starch to obtain the purest version of its amylopectin, the gelatinisation of the product is much lower.
Although other forms of complex carbohydrates increase the density of smoothies, Evopectin minimally impacts this property, allowing it to be used in light, easy-to-drink smoothies.
