Tapioca is derived from the root of the cassava plant and is fantastic as a thickener or baking agent.
This flour is gluten-free and therefore suitable for coeliacs.
Tapioca flour is extracted from cassava roots by a simple washing and pulping process. The wet pulp is squeezed to extract a starchy liquid which is then dehydrated into flour.

It's not flour, it's cassava starch. As starch it's fine but you can't make the same kind of recipes so money down the drain in my case.
