Hi Miguel, Our oat flour is dehulled to be instant, but it is not a refined flour because we keep a fraction of the bran, which allows its fiber content to be higher and therefore healthier, that slightly reduces how "fine" it can be, however, in the shake is not appreciated; the increase in density that you describe is normal, and is due to the thickening properties of any starchy flour. Nuestra harina de avena está descascarillada para poder ser instantánea, pero no es una harina refinada ya que conservamos una fracción del salvado, que permite que su aporte de fibra sea mayor y por tanto más saludable, eso reduce levemente lo "fina" que puede ser, sin embargo, en el batido no se aprecia; el aumento de la densidad que describes es normal, y es por las propiedades espesantes de cualquier harina almidonada.
