Very good alternative for thickening
Very effective for thickening, but be careful because it thickens a lot. the first time i made the mistake of pouring the whole scoop into my pancakes and i had to throw the batter away because it was practically solid. you have to pour very little. the good part is that because you have to pour so little, the product lasts a lot.

Compared to xanthan gum, it has even less flavor and dilutes much better. It is very potent, and is useful for cold preparations. It leaves ice cream super creamy and is great for making instant custard with protein. I will repeat.
