Excellent product

An excellent product, compared to guar gum, you have to be more cautious with the amounts of xanthan because it continues to thicken after mixing, for baking I would not use it at more than 0.5% of the liquid of the recipe, because if you do it at 0.75% or 1% as the guar at the end you run the risk that the dough does not rise, although at 1% to make soufflé type recipes (pancakes, mugs etc) I think the result is better with this xanthan (and if you let the mixture stand 5 minutes before cooking better) the result is more homogeneous. In my case it does not produce the gases that the guar does, although I do notice that it has a more laxative effect than guar.

Un producto excelente, en comparación con la goma guar, hay que tener más precaución con las cantidades de la xantana porque sigue espesando después de haberlo mezclado, para repostería no la usaría a más del 0.5% del líquido de la receta, porque si lo hechas al 0,75% o 1 % como la guar al final corres el riesgo de que la masa no se levante, si bien al 1% para hacer recetas tipo suflé (tortitas, mugs etc) creo que el resultado es mejor con esta xantana (y si dejas reposar 5 minutos la mezcla antes del cocinado mejor) es más homogéneo el resultado. En mi caso no me produce los gases que si me producen ligeramente la guar, aunque sí noto que tiene más efecto laxante que la guar.
